Fruitcakes by Teacakes
This delectable cake has been a favorite in our family
for over fifty years. "Lil Alice", mom was always able to take meager
ingredients and create the most mouthwatering cake and one that will
keep you sneaking back to it. As we say ""This one will not be passed
on".
The mixed fruit of lemon & orange citron is combined
with pineapple, dark raisins, cherries and cranberries. These
ingredients are soaked in brandy for several weeks prior to adding to a
delicious spiced batter of pecans and walnuts then slowly baked. After
baking more rum or brandy is added to begin the "soaking" process. The
term soaking is also called doctoring or mellowing. After you receive
your cake, you may want to add your favorite spirit. Ex. Peach or
apricot brandy, whiskey or rum.
It is best to use a serrated knife to slice the
fruitcake. One of Mama’s secrets was to dip the knife in a glass of
water prior to slicing. Cake may be rewrapped in cellophane or
cheesecloth and stored in an airtight container. Can be stored in
refrigerator for three months or frozen for a longer period of time. |
